Malai Kulfi Recipe
Who does not love ice cream or frozen dessert? Barring a few exceptions and that may be a very small percentage, whther kids or adults or old – all enjoy a frozen dessert. One such delicacy which is loved in the Indian sub continent is Kulfi. It is technically an ice-cream, but when made with creamy, condensed milk and rich flavour of condiments, it is a class apart. This is aptly called Malai Kulfi due to the flavour and creaminess, and it is a variety in its own right!
Preparation Time: 5 minutes Cooking Time: 25 minutes Makes 6 to 8 Kulfiz
- Full cream milk – 1 litre
- 1/2 cup condensed milk or 250 ml cream
- Powdered sugar – 1/2 cup (80-90 grams)
- Cashew nuts – 10 – cut in small pieces
- Green Cardamom – 4 or 1/2 tsp cardamom (elaichi) powder
- Pistachios – 10 – roughly chopped
- Few strands of Saffron, soaked in 1 Tbsp of warm milk for 15 minutes.
Step To Make Malaai Kulfi
Take milk in a utensil with heavy base, preferably non stick pan and allow it to boil.
Stir milk after every 1 – 2 minute and cook until it gets thick and half in quantity. Now add condensed milk / cream.
Now add sugar, chopped cashews and pistachios in milk. Allow the milk to thicken. Also add Saffron and cardamom powder in the milk and mix. Boil milk for another 1-2 minute.
Take milk mixture off the flame and allow it to cool. When the mixture reaches the room temperature, pour it into kulfi moulds, insert ice cream stick in the kulfi and freeze it for 6-8 hours or till firm.
Once the kulfi sets, place the kulfi mold in luke warm water for a few seconds to help it un-mould easily.
